As the leaves fall and change colors we prepare for a season of gatherings and celebrations. Each family–chosen or biological–has traditions and rituals that make the holidays a special time for them. For many cultures, creating and eating a meal together is a shared tradition. Whether you’re hosting or visiting, cooking for one or for 10 the recipes below would be welcomed additions at any dinner table.

Roasted Winter Squash

Squash is typically prepared in a savory way but it is versatile enough to be incorporated into sweets as well. Follow these steps for moist Pumpkin Squash Muffins and crunchy Roasted Pumpkin Seeds:

How to Roast Pumpkin or Squash Seeds:

Using a sharp knife, cut your squash or pumpkin in half, length-wise. Use a spoon to scoop out the flesh and seeds inside and place them in a bowl.

You can use almost any winter squash with this recipe, just make sure the seeds look hearty and fresh enough enough to eat.  You’ll know what bad seeds look like immediately. We want pumpkin and squash seeds that are shiny and pale colored with no dark spots.

 

After you’ve scooped the seeds out:

Fill the bowl with water and use your hands to separate the seeds from the flesh. Remove as much flesh as possible and drain the water.

Dry the seeds with a paper towel or clean dish towel. Add 1/2 tbsp of oil and a sprinkle of your favorite seasonings (go savory with salt and pepper or sweet with cinnamon and nutmeg).

Roast on 400 for 10-15 minutes, making sure to stir every 5 minutes, until the seeds are fragrant and toasted.
